Article February 08, 2004 Oatmeal, a rich source of dietary fiber, has been discovered to lower cholesterol levels in over 40 separate research studies. It is thought that the oat fibers mix with cholesterol in the small intestine and carry the cholesterol out of the body instead of it being absorbed into the blood. The Food and Drug Administration is also convinced---oatmeal was the first food to carry the distinction on its label to lower cholesterol levels Article: Oats and Cholesterol Lowering Oatmeal Cookie & Oatmeal Bread Receipes I don't know where I found the receipe, but I enjoy the cookies. You can probably use your favorite oatmeal cookie recipe and use 3/4 of honey in place of the sugar amount. 1 cup sugar would be 3/4 cup honey. 4 cups rolled oats 1 & 1/2 tsp cinnamon 1 tsp baking powder 1 pinch salt 3/4 cup "lowfat" margarine, softened 1/2 cup honey (If dough is too stick add a little extra honey) Depending on elevation if too moist add a pinch of flour. 1 egg 1 tsp vanilla 1/2 cup raisins (I add 3/4 as I like extra raisens) Optional: mashed banana or 1/4 cup applesauce. In food processor, process " 2 "cups of the rolled oats almost like flour. Add baking powder, cinnamon & salt. Mix lightly in processor. In bowl, blend together, butter, honey, egg & vanilla. Stir in oat processed mixture, remaining 2 cups rolled oats & raisins (optional). Drop heaping teaspoonfuls about 1 inch apart on ungreased baking sheet. Sort of flatten each dropped cookie with back of spoon. Bake in 375 F oven until done (about 16-20 minutes) Let cool slightly on sheet.
